Kellogg's Special K Taboulleh with starfruit and olives

A new spin on an immortal delicacy.

KEY INGREDIENT

INGREDIENTS

  • ½ cup Kellogg's Special K, crushed
  • ¼ cup Burgul wheat, soaked
  • ½ cup Fresh flat parsley, chopped finely
  • 5-6 Kalamata olives
  • ¼ cup Pomegranate kernels
  • 1 medium tomato, seeded, chopped
  • ½ medium cucumber, seeded, chopped
  • 1 Star fruit, sliced
  • Salt to taste
  • ½ Lime juice
  • 1 tbsp Extra virgin olive oil
  • 1 tsp Ground black pepper

DIRECTIONS

1. Toast Kellogg's Special K onto hot pan until crisp and crush it.
2. Add all the ingredients into mixing bowl except Special K and toss well.
3. Add Special K just before service; mix gently and serve.
