- ½ cups Special K, crushed
- ¼ cups Burgul wheat, soaked
- ½ cups Fresh flat parsley, chopped finely
- 5-6 Kalamata olives
- ¼ cups Pomegranate kernels
- 1 medium Tomatoes, seeded, chopped
- ½ medium Cucumber, seeded, chopped
- 1 Star fruit, sliced
- Salt to taste
- ½ Lime juice
- 1 tbsp Extra virgin olive oil
- 1 tsp Ground black pepper
1. Toast Special K onto hot pan until crisp and crush it.
2. Add all the ingredients into mixing bowl except Special K and toss well.
3. Add Special K just before service; mix gently and serve immediately.
